A wonderful roast for friends and family: The South Tyrolean recipe for the perfect duck breast with honey juice.

Duckling with honey sauce

Basic information

    2 duckling breasts (about 140 g each)

    2 tbsp oil for frying

    1 tbsp honey

    200 ml gravy

    1 tbsp cold butter

    freshly ground pepper



Remove fat and tendons. Salt and fry in oil until skin is crispy. Remove and glaze skin side with some honey. Put 1 tbsp honey in pan, add gravy and some cold butter. Finish baking the duck in pre-heated oven. Wrap in aluminum foil and let rest for three minutes. Cut duckling into slices and serve with honey sauce. Baking temperature: 180° Celsius. Time: 8 minutes.


A special tip:

Serve with potato casserole, potato fritters and parsley puree.
