Hospitality shaped by thoughtful choices

South Tyrol’s inn culture, regional produce and the people who care for what they create.

At a Stube table, on an alpine pasture or in a family-run restaurant, many dishes tell a story that goes beyond flavour. Behind them are people who pass down recipes through generations and choose ingredients from the region with care.

A more thoughtful approach to hospitality often takes shape where local value chains and practical choices come together. The South Tyrol Sustainability Label® identifies restaurants that meet verified criteria. Get to know the restaurants and the people behind them, and learn what shapes their cuisine, their choices and their connection to the region.

People who shape the flavours of South Tyrol

You don’t need grand statements. Often, real change starts with simple choices: working with producers from the area, adapting the menu to the seasons, or finding practical ways to avoid waste in the kitchen. Two stories show how these choices become part of everyday work.

How to recognise certified restaurants

Whether it’s regional products, short supply chains, reducing energy consumption and waste, or collaborating with local producers – the South Tyrol Sustainability Label® highlights which restaurants are implementing specific measures for sustainable development. The criteria are based on internationally recognised standards and are reviewed regularly.

For you, this means greater transparency when choosing a restaurant and the assurance that regional food systems, the thoughtful use of resources and responsible business practices are actively promoted.

Good to know

Restaurants with the South Tyrol Sustainability Label® meet established criteria in the areas of the environment, social responsibility, culture and management. The requirements are based on internationally recognised standards and are reviewed on a regular basis. The label highlights which businesses are implementing specific measures to promote sustainable development.

For you, this means more transparency when choosing a restaurant. Many businesses prioritise regional products, short supply chains, the responsible use of resources and close collaboration with local producers. By visiting us, you’ll be supporting the local economy and enjoying dishes with a traceable origin.

When a restaurant buys from a nearby farm rather than a distant wholesaler, the choice goes beyond cost. It supports local producers, shortens transport routes, helps preserve regional crop varieties and keeps more value within the local community. This is what a short supply chain means in practice: one of the clearest ways a restaurant can strengthen the place it belongs to.

Level 1 identifies restaurants that are implementing initial key measures for the responsible use of resources.

Level 2 refers to businesses that have already firmly integrated sustainability into their daily operations and actively promote regional cycles, accessibility and environmentally conscious business practices.

Level 3 is the highest award. These restaurants meet the highest standards of the South Tyrol Sustainability Label® and combine regional products, living traditions and responsible business practices in a particularly comprehensive way.

GSTC stands for Global Sustainable Tourism Council. The organisation is developing internationally recognised criteria for sustainable tourism. The South Tyrol Sustainability Label is based on these standards. The label's highest level meets GSTC requirements and is internationally recognised.
