    The highest level is "GSTC-recognized" and has gained an international recognition The accommodation establishments with this seal run a sustainable business and encourage a holistic perspective. It meets all nine criteria encompassing ecological, social and cultural factors. Holders of the highest level actively contribute to the safeguarding of the cultural heritage and authentically represent it. They purchase locally and engage local craftsmen and designers. Architecture and landscaping respect biodiversity and bear the South Tyrolean signature. The business ensures that even people with a physical disability  can move without limitations. Guests are encouraged to lead a car-free lifestyle and use more ecological means of transport. The team and stakeholders likewise.

    In the centre of the diocesan city of Brixen, under the arches, stands the townhouse of the Hotel Fink, due to be refurbished in the coming months. Uncovering the historic structure and respectfully renovating the old oriels and frescoes will create space in order to revive the building’s original character. The nine suites, restaurant and spa, all lovingly furnished in a clear and purist style, underline the townhouse’s cloistered atmosphere. The fink restaurant and suites will be ready to welcome you from June 2023

    Timeless elegance, local furnishings, cosiness in front of our fireplace and good music make yourself at home. Select from a wide range of wines from our list. Every day we select about 30 different wines to be tasted and savoured by the glass. We keep our menu intentionally small, so we can guaranty always the freshness of our products and at the same time we can surprise you at every visit with new dishes. We emphasize sustainable breeding and production, this why we try to use mostly local, regional and seasonal ingredients. During summer most of the vegetables come from our own garden, during wintertime we rely on our merchants. We got also best quality meat from our butchers, that keep an eye on animal fond breeding and slaughtering.

Because culinary enjoyment never stands still, our popular pizza is now not only available in the evening, but also at lunchtime. In addition to crispy baked pizza and fluffy pinsa, you can expect crispy salads, juicy burgers and many other delicacies - uncomplicated, regional and served with a charming wink. A visit in the afternoon is particularly worthwhile: home-baked cakes meet the finest ice cream from local manufacturer Venostes - a sweet break with a panoramic view, right in the centre of Val Senales.
