Mysterious eras of the past. The Boymont Castle is situated above Castle Korb (about 25 min). Enjoy the wonderful view over the valley Boymont Castle is situated above Missian and was built as the seat of a noble family in the year 1230. After a fire in 1425, the ruin was left to decline, until it was finally bought by Fritz Dellago in 1977. The two knights' halls, as well as the stone-framed arched windows, pillars and capitals are worth a visit in their own right. Only the freshly prepared medieval dishes create a rather delicious bridge to the future.

In our wine-shop, the "Wein- & Sektlaube KÖSSLER" at the Piazza San Paolo you can taste and buy all wines. Speck, cheese and south tyrolean bread - a typical in-between meal of the area Oltradige - accompagny when possible, the visit in our house.

Klaus Lentsch, scion of an old-established South Tyrolean winemaking family, decided to take a new path in 2008 and has been producing typical wines for the region ever since. Bachgart, Fuchslahn and Eichberg are the historical vineyards he can call his own. Discover the variety of tastes of the cru wines from the Eisack valley, the fresh white wines from the Überetsch and the strong reds from the porphyry slopes in the lowlands. Thanks to the most modern cellar technology, the mechanical processing can be carried out as gently as possible. Gentle pressing of the grapes and the subsequent gentle fermentation process transform the grapes from must into young wine. With muse and above all time during the ripening in the cellar, the harmonious wines of Klaus Lentsch are created in inox and wooden barrels.

Here the brute force of a bunker, there the elegance of a sparkling wine: the San Paolo Winery has brought together two apparent opposites, and it has been doing so since 1979. In that year, the first bottles of sparkling wine were filled and stored to mature in a bunker from World War Two. The result of that experiment is Praeclarus, which today is one of the calling cards of the San Paolo Winery.

Two hundred winegrowing families belong to the cooperative. They tend 185 hectares (457 acres) of vineyards in a spectrum of elevations that ranges from 300 to 700 meters (900 to 2,300 feet). The Chardonnay grapes that make their way into Praeclarus grow above the village at an elevation of around 500 meters (1,600 feet).

“This is the place where the grapevines find their optimal conditions,” explains Philipp Zublasing, winemaker at the San Paolo Winery. “On one hand, deep chalky soils; on the other hand, prominent temperature differentials between day and night which contribute to the special aroma of Praeclarus.”

This sparkling wine is produced strictly according to the classic méthode champenoise, with the second fermentation taking place in the bottle. The maturation time on the fine yeast amounts to at least forty-eight months, which the Praeclarus spends in the bunker. The temperature there is at a constant 12 degrees Celsius (54 degrees Fahrenheit), which is therefore ideal for a maturing sparkling wine. And incidentally, visitors can be convinced twice over: with a visit to the winery along with an excursion into the sparkling wine bunker, and of course with a bubbly glass.  

The castle tavern is open daily from 10 am to 6 pm, except on wednesdays. It is focused on dumplings and this is why you have the possibility to try different types of dumplings. In addition, typical South Tyrolian specialities, homemade cakes and a great selection of wines are waiting for you.

Your host Mr. Tarfusser is also our chef de cuisine and offers international, national and local South Tyrolean cuisine, guaranteeing real culinary highlights. For breakfast we delight your palate with a rich buffet.
