Our kitchen team headed by Chef Elmar Wild is renowned for its creative, tasty cuisine which always uses natural and healthy ingredients. The creations conjured up by head chef Tomek Kinder and his team are served in the Defregger Stube fine-dining restaurant and the Courthouse Stube dining room, where guests can look forward to a 5-course Alpine dinner. Great care is taken to ensure the perfect wine pairing, recommended by experienced sommeliers. Every day, hotel guests are treated to a magnificent breakfast with superb regional products including jams, cheeses, the best of cold cuts and much more in the original wood-panelled Stube dining room. Weather permitting, lunch, dinner and light meals are served on the garden terrace.

In the centre of the diocesan city of Brixen, under the arches, stands the townhouse of the Hotel Fink, due to be refurbished in the coming months. Uncovering the historic structure and respectfully renovating the old oriels and frescoes will create space in order to revive the building’s original character. The nine suites, restaurant and spa, all lovingly furnished in a clear and purist style, underline the townhouse’s cloistered atmosphere. The fink restaurant and suites will be ready to welcome you from June 2023

In our three dining-halls – two in Tyrolean rustic style from the year 1908 and one with vaulted ceiling – we serve you delicious creations from our chef Georg Steurer made of the best ingredients of the respective season, fresh fruit and vegetables of local produce as well as home made pasta and sweet delicacies. Elaborate preparation with mainly local ingredients, partly produced on our own farm, which leave nothing to be desired.
