Ravioli filled with potato salad

An Italian specialty: the ravioli - perfectly combined with potato salad

    • 250 g wheat flour
    • 3 eggs
    • salt
    • 200 g firm potatoes cooked the day before
    • 1/2 onion
    • 1 bunch chives
    • salt
    • 1 tsp vinegar
    • 1 tsp oil
    • ½ tsp mustard


Knead the pasta dough and then leave to rest for 1 hour. Peel the potatoes, cut into slices and mix with the remaining ingredients. Roll out the dough, cut it into discs, fill with potato salad, brush with beaten egg and then press the edges together firmly. Boil the ravioli in salted water for five minutes. Serve with butter and grated hard cheese or Parmesan. Preparation time: 30 minutes
