Cod „Gröstel“ with fine vegetables

The simple recipe for salted dried cod with fine and fresh vegetables. Refined according to traditional South Tyrolean style.

    • 400 g cod
    • 200 g pototoes, cooked in the peel and cut into slices
    • 30 g onionsl
    • 20 ml oil
    • 20 ml olive oil
    • 1 l fish broth or water
    • 50 ml white wine
    • 100 ml cream
    • ½ clove garlic, chopped finely
    • 1 tsp dill, chopped finely
    • 1 tsp parsley, chopped finely
    • 1 laurel leaf
    • 1 tsp white wine vinegar
    • ¼ tsp cinnamon
    • salt and pepper
    • potatoes
    • Zucchini, cabbage
    • Baked onion


Lay cod in cold water for at least three days. Change water daily until salt is less. Cook in a pot for 1 to 2 hours in broth, then let cool and cut into small pieces. Fry the potatoes in a pan with oil. Slice onions and sautee in olive oil. Then add garlic and let fish simmer. Add white wine, then cream, dill, parsley, laurel leaf and the potatoes. Season with salt, pepper, vinegar, cinnamon. Let rest for a while and then serve.
