Buttered potato noodles

Whether with potatoes or vegetables, no matter how we call them - buttered potato noddles are simply delicious!

Basic information

    • 400 g potatoes, starchy
    • 2 egg yolks
    • ½ tsp powdered nutmeg
    • 120 g flour
    • 50 g butter
    • 40 g bread crumbs
    • salt


Pare the potatoes, cut into cubes and cook in salt water. Sieve and let cool. Mash potatoes, add egg yolk, nutmeg and salt and let cool completely. Knead the flour into the potato mass and use the dough rapidly. Make 5 cm long finger thick noodles that have a pointy end. Roll in your hands or over the noodle board. Put noodles in cooking water. When the noodles float on top take them out. Melt the butter, add the bread crumbs, fry a little and then add the noodles, season with salt and serve.

A special tip:

Serve with meat dishes. The noodles may also be served with butter, cinnamon, honey, poppy seeds as a sweet dish. Always use the dough immediately, otherwise it gets too humid. Wine: Vernatsch from South Tyrol
