“Pröfing” is derived from “grafting” and, in the vernacular, means something like plant refinement. Just as the fruit trees were once refined and furred, today farmer Annemarie lovingly refines the fruits of our farm. In 2014 we decided to farm the Pröfinghof organically. Of course, this also includes biodiversity and so it came about that more and more fruits and vegetables, berries and herbs were planted around our farm. Since 2015 we have also been offering all of these processed treats in the small farm shop!

In our family farm shops we sell: vegetables and fruits of the saison, fruit spread, juices, cyser (apple mead), dried fruit, eggs, and honey from our bees.

The bakery, pastry shop and café Psenner is situated on the village square of Terlan and is opened every day (except on Sunday).

Since medieval times, butter and cheese have been produced in the mountain pastures. Even today, dairy products such as natural butter, yoghurt, cottage cheese and cream are still made there, particulary alpine cheese and local specialities such as "Graukas".

The bakery in Kastelruth is a family firm that has existed for several years. In the bakery, South Tyrolean specialties such as wheat and rye breads, baked goods such as cakes, pastries, cookies and cookies are produced daily. All baked goods are made from fresh, high quality ingredients and prepared with great attention to detail.

Below a small side road running towards Gummer is the sunlit Kronlechnerhof with its vast natural garden. Anna Maria Gall has been living here for some 34 years and has turned her passion into her profession. A wild mixture of countless vegetables and herbs thrives in her garden and fields. 

The farm shop is open from May to November from Tuesday to Friday from 9:30am to 11:30am and on Thursday from 3:00pm to 5:00pm , or by prior telephone appointment.

Our delicatessen store, 'Flora Gourmet’, located in the pedestrian zone of San Candido, is the only shop for specialties and high-quality food in the Alta Pusteria region. Here, friends of good taste can find excellent products for all occasions and needs. From our hotel kitchen at the Boutique & Gourmet Hotel Orso Grigio, we daily offer fresh Italian pasta as well as dumplings and Schlutzkrapfen from the Tyrolean cuisine. The selection continues with specialties from near and far, Italian delicacies both sweet and savory, and, of course, a highly selective choice of top-quality wines. We are open daily from 09:00 AM until 12:00 PM and from 3:00 PM until 7:00 PM and closed on Mondays.

Traditional Butcher's Shop since 1901 - manufactured bacon, ham and sausage production

When tradition is passed on through the generations, high values will be preserved through time. Great Grandfather Franz Windegger founded the company in 1901 and attached even then the imoprtance to highest quality and the best meat from South TYrol. We use for our sausages, ham and Bacon and ready to cook-products almost only regional products of the South Tyrolean nature. We also work only with trained personal and count on the best taste.

Proucts: mineral water from South Tyrol, drinks and fruit juices, beer, wine, sparkling wine, spirits, liqueurs, jam, traditional Southtryolean specialty and pasta.

I In the village center of Moos in Passeier you find the butcher Hofer, which is known for high quality of bacon, meat and sausages. The Hofer family has been practicing the butcher's trade with passion, precision and craftsmanship for over 55 years. The butcher is leaded by the second generation, from the brothers Kurt and Kilian Hofer, who took it from their parents Franz Hofer and Maria Girtler. Of particular importance for the Hofer family is the quality of their products. The processing process begins directly in our own slaughterhouse. Where the staff process the meat of fawns, lambs, cattle, calves, sheep and pigs with great care. Then it will process professionally in the sausage production and in the bacon production. The processing is still based on old tradition and natural recipes, but it has been refined by sophisticated production methods. The exceptional taste and quality of the meat products thus always remain

With the opening in september 2004 the alpine dairy Three Peaks offers for the first time the possibility to visit the production of cheese and dairy processing. After taking a view on the history and development of cheesemaking in the museum the production can be visited on a guided tour.

Certainly all the products of the alpine dairy can be degustated afterwards.
