The Karerhof farm in Welschnofen produces organic meat: the animals are kept in appropriate conditions on the farm before slaughter. It is important for the Pardeller family that the animals that will later be processed into meat should have as fulfilling a life as possible: they strongly believe that offering organic products also means strictly following the lifestyle itself.

When tradition is passed on through the generations, high values will be preserved through time. Great Grandfather Franz Windegger founded the company in 1901 and attached even then the imoprtance to highest quality and the best meat from South TYrol. We use for our sausages, ham and Bacon and ready to cook-products almost only regional products of the South Tyrolean nature. We also work only with trained personal and count on the best taste.
I In the village center of Moos in Passeier you find the butcher Hofer, which is known for high quality of bacon, meat and sausages. The Hofer family has been practicing the butcher's trade with passion, precision and craftsmanship for over 55 years. The butcher is leaded by the second generation, from the brothers Kurt and Kilian Hofer, who took it from their parents Franz Hofer and Maria Girtler. Of particular importance for the Hofer family is the quality of their products. The processing process begins directly in our own slaughterhouse. Where the staff process the meat of fawns, lambs, cattle, calves, sheep and pigs with great care. Then it will process professionally in the sausage production and in the bacon production. The processing is still based on old tradition and natural recipes, but it has been refined by sophisticated production methods. In addition to a variety of meat and sausage products can be found on our counter also cheese from local farmers, home-made salads, fresh bread, fruit and vegetables, but also pasta as Tirtlan, ravioli, gnocchi, noodles.

2010 we started making cheese from the organic milk of our goats at our farm. We breed the Deutsche Edelziege, a type of German goat race producing very precious and healthy milk. Goat milk is easily digestible and suitable for people suffering from an allergy towards cow milk. We produce semi-hard cheese as well as herb cheese of different maturing stages. In the cheesemaking process we pay attention to every detail to obtain organic cheese. By naturally aging the cheese builds a special ring improving the taste. Our goats produce milk just in certain seasons (the cheese production starts in April and ends in November). For this reason our cheese can be bought directly at our farm or ordered per mail just in this period. If you are interested to learn more about the process of the cheese making we will be pleased to welcome you at our farm!

With the opening in september 2004 the alpine dairy Three Peaks offers for the first time the possibility to visit the production of cheese and dairy processing. After taking a view on the history and development of cheesemaking in the museum the production can be visited on a guided tour.
Certainly all the products of the alpine dairy can be degustated afterwards.
