Chef Francesco Cacciapaglia manages to imprint his courses with his history, starting from his birthland and travelling through the most exotic places in a journey of ever improving professional growth. Subject to a continuous process of experimentation, the menu includes all Italian flavours, with a fancy for fresh fish, which takes our guests back to our favourite natural element: water.
