‘Bauernmuas’ spelt mash with honey and spiced oranges

Ingredients

4 servings
  • 5 tbsps butter with the South Tyrolean seal of quality
  • 1 l milk with the South Tyrolean seal of quality
  • 1 pinch of salt
  • 350 ml water
  • 170 g wholegrain spelt flour
  • 100 g forest honey with the South Tyrolean seal of quality
  • 2 oranges
  • 100 g cane sugar
  • 1 cinnamon stick
  • 2 cloves
  • 1 star anise

Preparation

Time to prepare: 20 min.

Combine half of the milk (500 ml) with 40 ml water and the flour. Heat 2 tbsps of butter in a frying pan, deglaze with 160 ml water and leave to simmer. Add the remaining milk and the honey, lightly salt and bring to a boil.

In the next step, add the flour mixture, stirring constantly with a whisk. Make sure that the mixture does not clump. Let the mixture simmer on low heat for 15 minutes, stirring constantly, then leave it to steam for a few minutes. Add the remaining butter.

Peel the oranges and cut them into segments. Once segmented, juice the rest of the oranges by pressing them through a sieve.

Caramelise the cane sugar in a frying pan, add the orange juice and 150 ml water and bring the mixture to a boil on medium heat. Add the spices (cinnamon stick, cloves, star anise) and leave them in the boiling liquid before reducing the heat.

Leave the mixture to simmer until it thickens slightly. To serve, place a scoop of ‘Bauernmuas’ in a bowl and arrange the orange segments on it.
