A typical South Tyrolean dish: the perfect cheese dumpling recipe with easy step-by-step instructions

Dumplings:
30 g onion
20 g butter with the South Tyrolean seal of quality
100 g South Tyrolean cheese (grey cheese or mountain cheese)
150 g of firm white bread cut into cubes, or breadcrumbs
2 eggs with the South Tyrolean seal of quality
100 ml milk with the South Tyrolean seal of quality
1 tbsp flour
Additional ingredients:
2 tbsp chives, finely chopped
Ground pepper
Salt
20 g Parmesan cheese, grated
30 g butter, browned
Preparation
Time to prepare: 45 min.
Peel and finely chop the onions, then sauté in butter. Cut the cheese into small cubes and add it to the breadcrumbs together with the sautéed onions. Stir the eggs into the milk. Combine with the chives and white bread. Season with salt and pepper and mix thoroughly. Add the flour and knead the mixture until the dough comes together. Shape the dumplings with wet hands. Bring plenty of salted water to the boil in a large pot, then add the dumplings to the boiling water to cook. Remove from the heat, drain and arrange on plates or in a pan before sprinkling with parmesan. Pour over the browned butter and garnish with chives.
Cooking time: approx. 15 minutes
