A must on the South Tyrolean mountain huts: the apple "Schmarren". Tasty!
Ingredients

150 g flour with the South Tyrolean seal of quality
100 ml milk with the South Tyrolean seal of quality
Oil for frying
butter with the South Tyrolean seal of quality
powdered sugar
100 ml cream
6 egg yolks with the South Tyrolean seal of quality
½ package vanilla sugar
1 tbsp rum
6 egg whites with the South Tyrolean seal of quality
½ tsp salt
40 g sugar
200 g South Tyrolean Apples PGI, cut into small slices
Preparation
Time to prepare: 40 min.
Difficulty: easy
Mix flour, milk, cream, egg yolks, vanilla sugar and rum into creamy dough. Beat egg whites with salt, then add sugar until peaked. Add to egg yolk dough. Heat oil in a big pan, then pour in dough, sprinkle in apples and fry until brown on one side. Turn and fry on the other side. Then put into preheated oven at 200° Celsius and bake for 3 to 5 minutes. Tear into pieces with a fork, sprinkle powdered sugar over Schmarren and then fry for a very short time in pan so the sugar caramellizes. Serve on hot dishes with some more powdered sugar.
