A must at every South Tyrolean Alpine hut: Speck-flavoured dumplings in beef broth.
Ingredients
4 servings
150 g of firm white bread or breadcrumbs
40 g onion
1 tbsp butter with the South Tyrolean seal of quality
80 g Speck Alto Adige PGI, finely diced
2 eggs with the South Tyrolean seal of quality
2 tbsps flour
100 ml milk with the South Tyrolean seal of quality
1 tbsp parsley or chives, finely chopped
salt
Additional ingredients:
1 tbsp chives, finely chopped
2 l beef soup
Preparation
Time to prepare: 45 min.
Cut the white bread into small cubes. Sauté the finely diced onion in butter, pour over the bread and mix. Mix in the flour and smoked ham. Mix the eggs, milk, parsley and salt and pour over the bread. Mix everything together. Let the mixture soak for about 15 minutes. Then form dumplings and simmer half covered in salted water. Serve the speck-flavoured dumplings in a hearty beef broth and sprinkle with chives. Cooking time: approx. 20 minutes
Recommendation: Cook a test dumpling to see if the dumpling holds together well. Works as either as a side dish with roast pork (ribs) or as a main with salad. Our wine recommendation: Lagrein Rosé
