Cream of herb soup

This simple and delicious South Tyrolean dish with fresh herbs delights family and friends

Ingredients

4 servings
    • 40 g fresh South Tyrolean herbs (e.g. chives, dill, basil, oregano, parsley, thyme)
    • 20 g butter with the South Tyrolean seal of quality
    • 3 tbsps flour
    • 750 ml meat or vegetable stock
    • salt
    • pepper
    • pinch of nutmeg
    • 50 ml cream
    • 1 tbsp South Tyrolean hard cheese or Parmesan

Preparation

Time to prepare: 15 min.

Finely chop the herbs. Heat the butter and add the herbs. Dust with flour and then pour in the stock. Leave to simmer for 9 minutes. Stir in the cream and season with salt, pepper and nutmeg. Leave to cook for a little longer. Purée in the blender. Serve with chopped herbs and grated hard cheese or Parmesan. Preparation time: 15 minutes
