Radicchio risotto recipe • A South Tyrolean original

Risotto is a Northern Italian rice dish that comes in many varieties. This version is made with delicious radicchio.

Ingredients

4 servings

    Risotto:

  • 200 g radicchio with the South Tyrolean seal of quality
  • 50 g onion
  • 1 garlic clove
  • 2 tbsps oil
  • 100 ml red wine (Lagrein or St. Magdalener)
  • 240 g short-grain rice (Arborio, Carnaroli)
  • 1 l beef soup or water
  • salt
  • ground pepper
  • Additional ingredients:

  • 2 tbsps butter
  • 30 g Parmesan cheese, grated

Preparation

Time to prepare: 50 min.
Wash, rinse and slice the radicchio into strips. Peel and chop the onion and garlic. Sauté in oil. Add the radicchio strips and sauté them. Deglaze with the red wine and stew until the wine has reduced nearly entirely. Add the rice, gradually pour in the beef broth and season with salt and pepper. Bring to a boil, stirring constantly. Add the cold butter and Parmesan cheese and serve immediately. Cooking time: approx. 20 minutes
