Radicchio risotto recipe • A South Tyrolean original

Risotto is a Northern Italian rice dish that comes in many varieties. This version is made with delicious radicchio.
Ingredients
4 servings
Risotto:
200 g radicchio with the South Tyrolean seal of quality
50 g onion
1 garlic clove
2 tbsps oil
100 ml red wine (Lagrein or St. Magdalener)
240 g short-grain rice (Arborio, Carnaroli)
1 l beef soup or water
salt
ground pepper
Additional ingredients:
2 tbsps butter
30 g Parmesan cheese, grated
Preparation
Time to prepare: 50 min.
Wash, rinse and slice the radicchio into strips. Peel and chop the onion and garlic. Sauté in oil. Add the radicchio strips and sauté them. Deglaze with the red wine and stew until the wine has reduced nearly entirely. Add the rice, gradually pour in the beef broth and season with salt and pepper. Bring to a boil, stirring constantly. Add the cold butter and Parmesan cheese and serve immediately. Cooking time: approx. 20 minutes
You can use chicken broth instead of beef broth. If you prefer your risotto smooth, add a little liquid or whipped cream to the finished dish. Our wine recommendation: Terlaner Chardonnay
